Every now and then you come across a recipe that is surprisingly yummy. Or one that everyone wants the recipe for after stating "I didn’t think I’d like it, but I do!".
Here is one of my favorites. It is fairly healthy for you, (mayonnaise is one of the ingredients), and yes it taste just like regular potato, potato salad.
Trust me, give it a try!
3 sweet potatoes, peeled, cubed, cooked crisp tender
1 cup green pepper chopped
1/4 cup onions
1 1/2 cups Light Mayo
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp hot sauce
Combine everything except the cooked sweet potatoes and mix well.
Fold in the sweet potatoes until well coated.
Chill 1 hour before serving, better if chilled overnight.
