Guacamole that Won’t Turn Brown

Well at least not in a reasonable time, a day or so….

This recipe is from The Iron Cactus, a Mexican restaurant in San Antonio, Texas. One of our friends from PA, who LOVES Mexican food, took us to the restaurant for supper.

They make the Guacamole right at the table and I watched carefully as it was prepared. The key is the lime and orange juice, it keeps the guacamole from turning brown.

Guacamole

  • Servings: 4

Ingredients

  • 2 ripe avocados, Mashed
  • 1/2 red onion, Diced
  • 2 small roma tomatoes, Diced
  • 1/4 an orange, juice of
  • 1/2 a lime, juice of
  • 3 tablespoons chopped fresh cilantro
  • ½ of 1 jalapeno, finely diced
  • salt
  • pepper

Directions

  1. Mix all ingredients together until desired consistency is reached. Enjoy!
