I love harvest time, especially as it gets closer to fall. There are fresh vegetables and fresh fruit everywhere. Alas, it does not last for long, so to enjoy some of that harvest flavor through the winter Britta wanted to freeze corn.
I went to Tebb’s and bought their large bag…12 dozen ears I think…and we got busy. First we had to husk them all. We filled up Britt’s compost pile for sure!
We blanched the corn and then Britta used her special “de-Kerneller” or whatever it is called to strip the cobs.
She insisted on demonstrating. Here we go.
1. Remove the corn from the ice bath.
2. Stick it on the nail in the board.
3.Use the “de-Kerneller” top to bottom, being careful the cob doesn’t come off of the nail.
4. Remove the clean cob from the nail and your beautiful corn is left behind. Easy Peasy.
She is crazy, silly and I love her to pieces.
After all that we bagged up the corn, leaving a little behind for my soups and froze the rest. Enjoy Britta!
